State-of-the-art stainless steel fermentation tanks inside PasoSecco winery used to ensure the clean finish of premium California sparkling wine.

The Charmat Method

“Charmat” means that the secondary fermentation to turn the still wine into bubbles takes place in a large, sealed, pressurized tank, rather than individually in bottles (like the Traditionelle/Champenoise process). The Charmat method allows us to produce larger quantities of sparkling wine in less time than Traditionelle, with more aromatics, and a tarter, crisper, more satisfying finish.
