The Charmat Method

“Charmat” means that the secondary fermentation to turn the still wine into bubbles takes place in a large, sealed, pressurized tank, rather than individually in bottles (like the Traditionelle/Champenoise process). The Charmat method allows us to produce larger quantities of sparkling wine in less time than Traditionelle, with more aromatics, and a tarter, crisper, more satisfying finish.
